I have recently installed and tested Windows 7 Release Candidate. And I also tried to install the softwares I usually install on my Windows XP after a reformat.
Here are some of the software that I am using, which are not compatible with Windows 7:

1. shadow user
2. sandboxie

-Those are both virtual machine software, used to redirect the things you are doing in your computer to the cache. To avoid virus invasion in the hard disk drive.
-So far, that's only two. But see for yourself if you can find software's which are also incompatible with Windows 7.

*But I found something on howtogeek.com, check this out:
-These are also incompatible softwares:
1. Microsoft Windows Live OneCare

3.Norton AntiVirus 2009
4.Avast! AntiVirus Home
5.Kapersky Anti-Virus 2009-They say its uncertain if it's compatible or not. But I already tested it and its compatible for me.
6.ESET Nod32 Anti-Virus
7. Kadpersky Internet Security 2009
8. BitDefender 2009 Total Security

*And this list if according to kioskea, its compatible with windows 7:
